General Executive Sous Chef duties will apply. Previous experience within similar position within an upmarket 5* Game Lodge required.

Responsible for training chefs & implementing kitchen standards.
Abide by the 7 day Menu set according to styling guide
Work with the training chef when visits are conducted and be feedback fit.
Presentation as discussed and according to Styling Guide
Creative Bush Banqueting according to Food Styling Guide
Good communications with:
All camp managers
Heads of Department
Good stock controls and stock rotation
Responsible for all food orders, storerooms and fridge and deepfreezers in absence of the executive chef
All food going out to guests at any time to be checked in absence of the executive chef
Chef to check buffets/dinner/breakfasts
Formal Professional Cookery Diploma Essential.
Great Cooking skills. 5* Star Service Orientated. Experienced ideally in a Game Lodge set up. Good Leadership and Management abilities.
