Luxury 4/5* Game Lodges and Spa located in the Eastern Cape.
You will be responsible for the following duties: Menu planning, kitchen prep and set up, follow strict hygiene and safety protocols, staff training, staff rosters, food cost control, replenishing and ordering of stock, implementing standard kitchen rules with regards to FIFO and hygiene standards, This will almost be a group Executive Chef role in that you will manage 6 lodge kitchens on the reserve so must have the experience and capability to do so, report daily too and work alongside the Food and Beverage Manager, A Management Couple will be considered if partner is a Strong General Manager/Hospitality Manager with Multiple Lodge Management Experience at 4/5* Level. Regret – couples/individuals with Children/pets will not be considered due to staff accommodation and safety constraints.
4-5 years in a similar role (5 star, Multi outlet) , creative and innovative menu development, good knowledge of back office POS systems and Microsoft Office, hygiene and safety certifications would be to your advantage, hot and cold kitchen experience, food cost control. Must have experience at Managing multiple Kitchen Outlets and have strong staff Management and training ability.
