A multi outlet site (6 to be specific) - Blue Collar and White Collar at a Manufacturing Plant. Contract is located in Pretoria North so would be ideal if person is located in Pretoria. Currently we are serving about 400 lunch meals on 1st shift, 250 meals on 2nd and 3rd shift (this excludes call order & breakfasts). It is a 24 hour operation but this role will not require shift work.

Job Description

We are seeking a Well experienced Catering Project Manager (With Corporate/Blue and White Collar mix experience). Candidate must have a proven track record of Contract Catering Management, with excellent customer Service skills, Financial, Budgeting and Reporting Skills, and very strict Hygiene Management skills (HACCP).

Daily duties will include the following:

Till readings for night Shift/Sat production. Check feedback. Check Cashloader Online. Merchandising – Display Fridges. Resale Shelves and Cooldrink fridges at dailys, food court and coffee shop.  Banking. Daily Cash Control, Cash Purchase Reporting. Supervise and assist breakfast service, portion control Canteen where needed. Check food temp log sheets, fridge logsheets, dishwasher temps, foreign body inspections at all 6 outlets. On the Job training. Quotations for Functions and Purchase Orders, HR, Staffing and IR. Daily menus and distribution to all outlets. Promos and Flyers. Menu Advertising. Supervise and assist Lunch Service. Coffee Shop Sales mix. Reports to HOD and Chef. Cleaning inspections (Tight HACCP Controls). Daily reports – Revenue, GP, Staff Attendance, Production Schedule, Analyse numbers. Plan with HOD and Chef.  Management of 55 Staff.


Formal Food Service Management/Catering Management Qualifications will prove an advantage but not essential.


Candidate doesn’t need to be a chef, we have an executive chef on site (won't hurt but its not a must). Cooking will be very limited. Strong people management skills (current staff compliment around 55 staff). Strong F&B skills. Strong client interaction with exceptionally difficult and high standards. Problem solver (shifts get cancelled at last minute, shifts get added last minute so needs to be able to think on feet) Strong on health & safety – this is not negotiable please.
