Our client seeks a top notch Fine Dining Sous Chef. Will be hands on with the preparation and production of meals. Oversee the management of the Pass in the absence of the Head Chef, Oversee mise en place, quality, portion control, plating and presentation. Assist with Menu planning for specials and tasting menus. Manage stock and junior staff. Training of staff. Stock control. Previous experience as a Sous Chef in a Fine dining Restaurant. Formal Culinary Qualification from a reputable culinary institution/academy (Ideally that focuses on quality fine dining presentation).
