Key Responsibilities:

• Lead and oversee all food production and service activities, ensuring exceptional quality and presentation across all lodges.
• Develop, review and innovate menus, recipes and food concepts to maintain luxury hospitality standards.
• Manage daily kitchen operations, streamline processes and coordinate across departments.
• Oversee food production for restaurants, room service, events, conferences, weddings and special functions.
• Implement financial management strategies to minimise costs and maximise profitability.
• Ensure full compliance with HACCP and food safety standards.
• Lead, mentor, and develop culinary teams, conducting training and performance reviews.
• Monitor guest feedback, resolve concerns and drive continuous improvement initiatives.
• Maintain accurate food costing, menu specifications and operational records.
