Our client is seeking a Food and Beverage Stock Controller responsible for the effective management, control, and monitoring of all food and beverage inventory within the reserve. This role ensures accurate stock levels, minimizes losses, and supports efficient operations by providing all departments with the required stock while adhering to strict quality standards and financial procedures.
Key Responsibilities:
Stock Control
Receive, inspect, and verify all food and beverage deliveries against purchase orders and supplier invoices.
Ensure that all stock received meets the Sibuya quality and quantity standards.
Accurately capture all stock received into the inventory management system.
Issue stock to departments (camps and lodges) according to approved requisitions.
Maintain accurate stock records and inventory balances at all times.
Conduct daily, weekly, and monthly stock counts.
Investigate and report stock discrepancies, shortages, breakages and wastage.
Inventory Management
Monitor stock levels to prevent overstocking or stock shortages.
Rotate stock using the FIFO (First-In, First-Out) principle.
Ensure proper storage conditions for all food and beverage items.
Monitor expiry dates and remove expired or damaged stock.
Recommend stock replenishment based on consumption trends and occupancy levels.
Cost Control
Assist in maintaining food and beverage cost percentages within budget.
Identify opportunities to reduce waste and improve inventory efficiency.
Monitor stock variances and recommend corrective actions.
Prepare regular inventory and variance reports for management.
Purchasing Support
Assist with stock ordering based on approved par levels.
Liaise with suppliers regarding deliveries, shortages and product quality.
Verify supplier invoices before submission for payment.
Compliance and Safety
Ensure compliance with food safety, hygiene and health regulations.
Maintain clean, organised, and secure storerooms.
Follow company policies regarding stock security and loss prevention.
Participate in internal and external stock audits.
Administration
Maintain accurate filing of invoices, delivery notes, requisitions, and inventory records.
Prepare daily, weekly, and monthly stock reports.
Assist management with budgeting and forecasting inventory requirements.
Transport of Stock
Camp orders are to be packed and loaded for delivery.
Cold chain must be followed from distribution centre to the camp.
All items are to be checked prior to delivery and check on receiving at the camps or lodges.
Collection of orders in town
Grade 12 (Matric).
Driver’s license with experience driving on a game reserve.
Diploma or Certificate in Hospitality Management, Food & Beverage Management, Supply Chain Management, or a related field is advantageous.
Minimum of 2-3 years’ experience in stock control within a hotel, lodge, or hospitality environment.
Experience working in a 4-star or 5-star establishment is preferred.
Proficiency in Microsoft Excel and inventory management systems.
Knowledge of food and beverage costing principles.
Strong numerical and analytical skills.
